Rooibos Lavender Cocktail

A refreshing drink for unforgettable summer nights. The recipe was created together with Shiruna using our Rooibos essence. Recipe for 1 cocktail glass.

Ingredients:

  • 150 ml coconut milk (or other plant milk)
  • 30 ml Rooibos essence
  • 30 ml rum, e.g. coconut rum
  • 50 ml water
  • 1 teaspoon dried or fresh lavender (or 1 teaspoon lavender syrup)
  • ½ teaspoon date syrup (optional)
  • 4 – 5 ice cubes and cocktail shaker

Preparation:

  1. Heat the chai essence, lavender and water in a saucepan and let it simmer for about 5 - 7 minutes on a low heat. Allow to cool and strain the mixture through a sieve.
  2. Cocktail shaker: Add rum, cooled chai mix, date syrup and ice and shake well.
  3. Pour everything into a cocktail glass and top up with frothed coconut milk (you can froth the milk cold with a milk frother).
  4. Sprinkle with fresh or dried lavender.
