Cinnamon
botanically known as cinnamon (Cinnamomum verum) and cassia cinnamon ( Cinnamomum cassia), it is a spice obtained from the bark of cinnamon trees. Cinnamon originally comes from Sri Lanka, southern India and Myanmar. Today it is grown in many tropical countries, including Indonesia, China and Vietnam.
Look
Cinnamon trees are evergreen trees that can grow up to 10-15 meters tall. The leaves are leathery, shiny and green, with an oval to lanceolate shape. The flowers are small, white to yellow and grow in panicles. The most important feature for cinnamon production, however, is the bark. This is peeled off, dried and rolls up into the typical cinnamon sticks.
Taste and Aroma
Cinnamon has a warm, sweet and slightly spicy taste. The aroma is intense and is mainly determined by the essential oils it contains, especially cinnamaldehyde. Real cinnamon has a more subtle, delicate taste, while cassia cinnamon tastes stronger and spicier. We only use real cinnamon for our chai blends.
